Philip Dennis Foodservice is once again proud to support North Devon Hospice’s Big Breakfast. As the most important meal of the day, Big Breakfast is a great way to raise funds for this important charity and Philip Dennis is always happy to help with this great initiative.

Events have already been held at many pubs and clubs throughout the region, and the hospice held a special thank you breakfast for its sponsors and supporters on Monday 16th March.

There are a number of events planned for later on this month, but with uncertainty regards the current Coronavirus situation, it will be best to check with the venues for the latest information.

New Regional Sales Manager

Philip Dennis Foodservice is delighted to announce the appointment of Craig Seymour as the new Regional Sales Manager for the South West.
Craig brings a wealth of industry knowledge to the role with over 25 years’ experience in the foodservice industry. Most recently, he has worked with Philip Dennis as Group Account Manager overseeing key accounts and major contracts.
Based at the company’s Roundswell offices near Barnstaple, Craig will now manage a team of six sales team members across the South West and said: ‘I’m really excited to be given this new opportunity. It’s a growth time for foodservice companies with new trends such as street food and plant-based menus making a real impact on customer’s dining experiences.
‘For the South West there is real opportunity as more and more areas are finding that their custom is now all year round rather than seasonal and, as a result, the more support we can give them in providing innovative ideas and menu inspiration the better.’

Philip Dennis Expands in the Midlands

Philip Dennis Foodservice is delighted to announce that is has acquired a new transport and warehousing depot in Dudley, West Midlands. The new premises, on Shaw Road, are as a result of increased foodservice business with pubs, restaurants, hotels, schools and coffee shops around the area.

Lisa Vermeulen, Regional Sales Manager for the Midlands said: ‘As a result of continuing growth of our foodservice distribution and growing number of customers in the West Midlands area, we have invested £1.5 million in new office, transport and warehousing space so that we can offer an increased level of service to our customers.’

The new premises also offer easier access for the company’s distribution fleet and Logistics Manager Lyndon Didlock said: ‘At Philip Dennis we are always looking to improve the level of our delivery service and we can now manage our fleet much more effectively.’

Still a family owned company, Philip Dennis Foodservice also has depots in the South West and Oxfordshire, and supplies a full range of foodservice products including groceries, frozen and chilled food as well as a range of non-food items, including cleaning solutions and environmentally friendly food cartons and takeaway items.

Dennis Family Fishmongers has a new face! In order to increase its service offering to customers, Philip Dennis Foodservice is delighted to welcome Nathan to its sales team as Fish Specialist. Nathan Smalldon has worked at Philip Dennis for nearly three years, and brings a wealth of foodservice industry sales to the role. He said: ‘I’m really excited to take on the role as fish specialist for the sales team. Dennis Family Fishmongers has so much to offer our customers and I will be on hand to answer any queries on our product range, what’s fresh and in season as well as providing help and advice with inspirational menu planning.’ Working with local fish businesses in Devon, Dennis Family Fishmongers is renowned for its high quality fish and Nathan is determined to raise awareness of the freshness of the stock. For spankingly fresh fish from North Devon fishing boats, look no further than Dennis Family Fishmongers. 

Working with local fish businesses, Dennis Family Fishmongers is renowned for their high quality fish.

‘What makes it special,’ says Lee, Fish Division Manager, ‘is the fact that we are processing the fish straight off local boats. The fish is put on ice at sea, landed and is driven no more than 30 minutes to us at the processing unit in Barnstaple, so it doesn’t do any of the motorway miles that much fish has to endure, and it isn’t thrown about at market either. And when you open a box of lemon sole and see them firm as a frisbee because they’re so fresh, it’s just brilliant.’

Amazingly the North Devon coast yields around 75 species across the year, from tonnes of squid in summer (much of which is exported) to bass, skate, plaice and cod. ‘I know there is a cod quota,’ says Lee, ‘but it’s plentiful out there and when we receive it it’s in perfect condition and comes straight to us to be filleted.’

Of course, Lee himself a great fish fan. ‘My favourite fish dishes are monkfish wrapped in parma ham and John Dory on the bone – especially that sweet bit of meat in the cheek,’ he says, although he doesn’t get much time for cooking. ‘I start at 7am and usually don’t get home until 7pm, so for me it’s usually just a case of rustling up something quick and easy, then a bath and bed!’

Inspired seasoning for show-stopping salmon supremes

A Great Blank Canvas

Salmon makes a great blank canvas and is considered a fairly ‘mainstream’ fish that holds wide appeal. Such a combination means you can showcase your creativity, without putting off some of your less-adventurous customers. At Philip Dennis, we regularly host workshops designed to keep our Account Managers inspired and full of tips to share with you. Easily adapted to all seasons, we reviewed a variety of seasoning recipes, alternating between using a marinade, dry rub, glaze or sauce to pack in the flavour.

General Cooking Instructions

For each of these recipes, preheat oven to 200C; cover a shallow baking pan with foil and spray with non-stick cooking spray. Lay the salmon fillet on the foil, skin-side down and bake until cooked to the customers liking – approximately 10 minutes per inch of thickness. All recipes call for 6ptns x 140/170g Salmon Supremes (skin on) (PRME0050). Double ingredients for a whole side of salmon. You’ll find these ingredients in your 2018 product guide, or simply ask your Account Manager for further ideas and support.

Marinade

Ingredients 1 lb (500g) Salmon Fillet 1 tbsp Honey Lemon & Mustard (MAIN6102) 2 tbsp Horseradish Sauce 2 tbsp Dijon Mustard 2 tbsp Oyster Sauce 2 tbsp Soy Sauce ¼ cup (60ml) Dry White Wine

Method

Prepare the marinade by combining all the ingredients in a small bowl. Place the marinade and the salmon into a resealable freezer bag and refrigerate for several hours or overnight before cooking.

Dry Rub

Ingredients 1 lb (500g) Salmon Fillet 2 tsp Fish Based Powder (MAIN6174) ½ cup (90g) Brown Sugar 2 tsp Red Pepper, crushed 1 tsp Black Pepper 1 tsp Dry Mustard

Method

Microwave the butter and peach preserve for 45 seconds, and then stir in the lime juice, garlic, honey, lemon & mustard. Reserve and refrigerate 1 cup of the glaze. Combine salmon and the remaining glaze in a resealable freezer bag and refrigerate for 20 minutes. Cook the salmon, basting with reserved glaze every five minutes with a brush.

Sauce

Ingredients 2 lb (1kg) Salmon Fillets 8 oz (240g) Unsalted Butter 1 tbsp Cinnamon 1 tsp Dried Basil 1 tbsp Fish Paste (MAIN6033) 2 cups (150g) Cranberries 1 cup Orange Juice ¼ cup (50g) Sugar

Method

Spread the salmon with butter and fish paste, then sprinkle with cinnamon and basil. Whilst the salmon is cooking, blend the cranberries (reserving a few per serving for garnish) and orange juice until smooth. Bring sauce to the boil, then remove the heat. Drizzle sauce over cooked salmon and garnish with reserved cranberries and shredded basil.

Time to talk trims! Why we spend longer on prep without it costing extra

Trimmed to perfection

With our bespoke preparation service, we devote more time to each fillet than many others. With suppliers offering various trims, it’s important to know what you’re getting and why. Let us fill you in on fancy filleting and why we don’t believe in charging for it. When purchasing your salmon, it’s important that your supplier explains which trim you’re buying. There are typically four different trims available, from Trim A being the most basic (with lots of wastage for chefs) to the top-end Trim D being far superior. Suppliers use a variation of these trims, but we will always ensure you receive the quality you expect from Dennis Family Fishmongers. This means going the extra mile, not only providing Trim D but also making sure that skin is fully scaled. That way, it’s truly ready-to-use, with no mess and no chance of burnt scales to the pan!     Oh, and before you ask, the answer is ‘no’ – we don’t charge you extra for that, it’s just what we do as standard to reserve our hard-earned reputation for dedication to quality and detail.
